Production and Harvest
Selective harvesting by hand and with mechanical assistance. Harvesting happens in May, June and July, all the coffee is traced by each plot from the plantation to the processing area.
Post Harvesting
All coffees pass through a first drying stage at our 2 hectares Patio, then through a second drying in any of our 23 mechanical dryers, where coffee never surpasses 37C degrees. With this, we ensure coffees at the right humidity, water activity and quality.
